 Cafe Puerto Rico
Eat as much mofongo as possible. The Cafe Puerto Rico in Old San Juan makes a mean sangria that goes perfectly with the sweet plantain, flank steak mofongo. I'm still dreaming about it. But Don Pepe Restaurant, right outside the Wyndham Rio Mar's entrance, was my favorite mofongo.
Stay at the Wyndham Rio Mar, one of the closest hotels to El Yunque rain forest. The Rio Mar has a wonderful, on-site tour company called Dragonfly that is ready to take you into the rainforest. Guides are very knowledgeable and prices run about $60 per person.
Kayak Bioluminescent Bay at night on the extreme west coast of Puerto Rico. This is one of those experiences to write home about. Again, Dragonfly tours will take you from the Wyndham to Las Croabas, home to millions of dinoflagellates, microscopic organisms that release energy in the form of light. Your paddle will start glowing in the water as you explore the bay. But just as with most things in life, the journey is part of the experience. Kayak to this bay through beautiful mangroves in the pitch-black night. All you can see is your guides glow-stick headband.
 
El Yunque Rain Forest and La Mina Waterfall
Hike to La Mina Waterfall through El Yunque Rainforest. Follow the 2-mile La Mina trail, along La Mina River. Easy enough to remember. Once you get to the waterfall, dive in. The water is cold but is the perfect reward in the muggy Caribbean rain forest.
Tour Old San Juan with plenty of time to shop and eat. You can also sign up for the tour that includes the Bacardi factory. Try a mojito straight from the source.
